Recipe: Black bean soup

This black bean soup is one of my very favorite recipes.  If you like black bean soup, I promise you will love this one!!  There are two key ingredients that you cannot leave out: coconut milk and chorizo sausage.  Coconut milk you can buy in a can usually in the international section of the grocery store.  Chorizo sausage is a Mexican sausage that is sometimes hard to find, but do not substitute for Italian sausage.  It won's taste right.  I usually have to go in a Food Lion to find it.  Sometimes Walmart has it too.  its located in the refridgerated section, sometimes with the breakfast sausages (sometimes I have to ask the butcher to help me find it).  Ok,here goes...

Ingredients:
8 oz (give or take) Chorizo sausage
2 (20oz) cans of black beans
1 (20oz) can of refried black beans (Trader Joes my favorite)
1/3 c coconut milk
1 can chicken broth
1/2 a lime
3-4 cloves of garlic (pressed)
1/2 c white wine

Directions:
Brown the sausage in the bottom of your soup pot.  The sausage is kinda red in color so its hard to know when its done.  It should not look so mushy, but more separated, like really fine ground beef.  Drain grease if its really greasy.

Combine all the rest of the ingredients except the coconut milk.  Bring to a boil, then simmer for 20 minutes.  Add the coconut milk, simmer 10 more minutes.

Serve with a dollup of sour cream and top with chopped green onions or jalepenos if it you want extra spice.

Hi Holly- I stumbled upon your blog VIA Steven's VIA another on twitter- crazy how that works, huh? Anyway, a couple of things, during the one prayer series, we had the honor of hearing your husband preach at our church, here in MA www.lifesongonline.org He was engaging, but my take away was though young, he is armed with a truth he is unashamed to preach! Blessings to the Furtick family :)
Secondly, because of your hubby's blog-just watched the 4 part videocast that so encouraged and affirmed what God has been revealing to me for years :) Finish well, and so I shall.
And lastly, I work with a lady, Jeanie, leading a local mission, www.walkinginlight.org , and once a month, make a hot lunch for the ladies that she and her team minister to. I love to cook using the best ingredients for the lowest cost so even the food can be a witness to them :) (Loaves and Fishes) Anyway, this last month, I was given 2 cases of black bean soup! You know where this is going...I will drain them and use the beans to add to your recipe above :) Thanks God for this timely 'find!'
